Thai Tom Kha Chicken Soup Recipe:
You'll need:
1 pot Thai Tom Kha paste
400 ml (1 tin) coconut milk
1 small chicken breast (150g) - thinly sliced
1/2 onion (50g) - square cut
100g chestnut mushrooms - sliced
1 large tomato (100g) - cut in large pieces
Steps
1. Add the Thai Tom Kha paste, coconut milk and 400ml water in a pot and bring to a boil. Simmer for 10 minutes.
2. Add the onions, mushrooms and tomato and simmer for another 5 min.
3. Add the chicken and cook for 2-3 minutes until the chicken is cooked.
4. Garnish with fresh coriander, red chilli and a lime wedge.
5. Serve on its own or with some rice.
