Chicken Tikka Masala Recipe:
You'll need:
2 pots Tikka Masala paste (2 x 80g)
1 tbsp yoghurt (30g)
1 tbsp tomato paste (20g)
1 tin of tomatoes blended finely (400g)
4 tbsp vegetable oil (40g)
6 chicken thighs - boneless/skinless (600g) cut into cubes
Double cream (80g)
Steps
1. In a deep saucepan, fry one pot of paste from frozen in 2 tbsp of oil (20g) until melted and sizzle for 1 minute. Add the tin of blended tomatoes and simmer for at least 20 minutes. Add some water if it gets too thick.
2. While the tomatoes are cooking, release the second pot of paste into a bowl and defrost in microwave for 30 sec. In a large bowl, mix the defrosted paste, chicken, yoghurt, tomato paste and 2 tbsp oil (20g).
3. In a frying pan, sear the chicken in two batches (2 min per side) in 1 tbsp of oil per batch and set aside.
4. Add the seared chicken into the tomato sauce and simmer for 4-5 minutes or until the chicken is done.
5. Add the double cream and a knob of butter for extra richness and simmer for 1 minute.
6. Garnish with fresh coriander and serve with hot buttered naan or rice.
