Chicken Tikka Masala Recipe:

You'll need:
2 pots Tikka Masala paste (2 x 80g)
1 tbsp yoghurt (30g)
1 tbsp tomato paste (20g)
1 tin of tomatoes blended finely (400g)
4 tbsp vegetable oil (40g)
6 chicken thighs - boneless/skinless (600g) cut into cubes *substitute with paneer (400g)
Double cream (80g)

Steps
1. In a deep saucepan, fry one pot of paste from frozen in 2 tbsp of oil until melted and sizzle for 1 minute. Add the tin of blended tomatoes and simmer for at least 20 minutes. Add some water if it gets too thick.
2. Meanwhile, release the second pot of paste into a bowl and defrost in microwave for 30 seconds. In a large bowl, mix the defrosted paste, chicken, yoghurt and tomato paste.
3. In a frying pan, sear the chicken in two batches (2-3 min per side) in 1 tbsp of oil per batch and set aside.
4. Add the seared chicken into the tomato sauce and simmer for 4-5 minutes or until the chicken is done.
5. Add the double cream and simmer for 1 minute.
6. Garnish with fresh coriander and serve with hot buttered naan or rice.
