Air Fryer Jerk Chicken Breast

This recipe is a game changer - Jerk Chicken in 20 mins! Purists would say the chicken needs to be BBQ'd in a Jerk drum, but we think this comes pretty close, and it is so moist!
Ingredients

1 pot Ice Kitchen Jerk Paste

2 tbsp vegetable oil

2 chicken breasts (skin on preferred)

2 tbsp tomato ketchup

Rice and peas (make your own or use Tilda’s microwave version)

1 ripe plantain (thick sliced)

Coleslaw
Directions
Release paste into a microwavable bowl & defrost for 30 secs, or leave out for 30 mins. Mix in 1 tbsp oil.
Rub 1 heaped tbsp paste-oil mix per breast. Reserve the remaining mix for step 5 (dipping sauce).
Cook at 200 C for 15 mins in a pre-heated air fryer or 20 mins in an oven until done.
Fry the plantain in 1 tbsp oil for a 1-2 mins until golden, then set aside.
In a small pan, heat the remaining paste-oil mix until sizzling. Add ketchup & a splash of water & cook for 1 min.
Serve with Jamaican style rice and peas (Jamaican for kidney beans), plantain and coleslaw.
